Ingredients
2 tsp. extra-virgin olive oil 1 green pepper, finely diced 1 white onion, finely chopped 2 tomatoes, peeled and diced 1 garlic clove, finely chopped 2 tsp. fresh basil, stacked, rolled and sliced into ribbons 4 cod fillets, skinned, approximately 4 ounces each juice of 1/2 lemon sea salt, pepper to taste lemon slices for garnish DIRECTIONS:
Heat oven to 374 degrees. Brush four large squares of foil with a little
oil. Serves 4
